A healthy snack for the youngsters. You can adapt the recipe if your child is allergic to peanuts.
You will need:
2 cups uncooked oatmeal
½ cup almond butter or peanut butter
½ cup raw honey or golden syrup
½ cup coconut oil
¼ cup cocoa powder
¼ teaspoon vanilla essence
Mix all the ingredients and stir well.
Place one tablespoon of the batter on a baking plate. Repeat the process until you have approximately 15 cookies on the plate.
Place in the freezer for one hour before enjoying. Pack the cookies in a plastic container and store in the freezer.
Eat the oatmeal cookies directly from the freezer. The coconut oil will start to melt if the cookies are left outside.
