On the hot Christmas day serve a cold beef fillet.
You will need:
1 beef fillet (size of your choice)
¼ cup coarsely ground pepper corns
1 teaspoon coriander
1 teaspoon cumin
1 tablespoon oregano
1 teaspoon grated ginger
1 teaspoon chilli powder
1 teaspoon paprika
1 teaspoon salt
1 teaspoon dried thyme
1 tablespoon brown sugar
2 tablespoons olive oil
Spread the olive oil over the beef fillet’s top and bottom, place in the fridge for 20 minutes. Mix the pepper corns, coriander, cumin, oregano, ginger, chilli powder, paprika, salt, pepper, thyme and brown sugar in a mixing bowl.
Spread the mixture over the beef fillet, making sure the entire fillet is well covered on both sides.
Heat a skillet or frying pan with olive oil, fry the beef fillet for approximately three minutes on both sides.
Set the fillet aside to rest for approximately ten minutes. Cut in slices of two centimetres thick. Enjoy with your Christmas meal side dishes.
