A special cheese hors d’oeuvre for Christmas.
You will need:
½ Camembert cheese per person
2 cups fresh cherries, pips removed
4 finely chopped nectarines
1 tablespoon thyme leaves
1 tablespoon golden syrup
1 teaspoon vanilla essence
1 tablespoon lemon juice
1 teaspoon honey
1 tablespoon castor sugar
1 cup coarsely chopped pecan nuts
Preheat the oven to 180°C.
Cut the Camembert cheese length-wise. Place the halves in an oven pan and bake for approximately 10 minutes until the cheese has melted.
Heat the cherries, peach pieces, thyme leaves, golden syrup, vanilla essence, lemon juice, honey and castor sugar in a small saucepan.
Lower the heat and simmer the fruit until a thick syrup forms.
Spoon some of the Camembert cheese, cherry syrup and pecan nuts on to the Melba toast and decorate with thyme leaves. Enjoy as a very rich Christmas hors d’oeuvre.
