The best cookies under the sun. I always have these cookies in the cookie jar.
You will need:
2½ cups flour
1 teaspoon bicarbonate of soda
½ teaspoon salt
2 cups brown sugar
1 cup milk chocolate or dark chocolate chips
½ cup white chocolate chips
1 tablespoon finely chopped pecan nuts
1½ teaspoons vanilla essence
Preheat the oven to 180ºC.
Line a baking plate with baking paper and spray with Spray and Cook.
Sift the flour, salt and bicarbonate of soda together in a mixing bowl.
Beat the butter and sugar together in an electric mixer until the butter is light cream in colour.
Add the eggs and vanilla essence and beat well.
Add the flour mixture to the sugar batter slowly. Beat well.
Add the white and dark chocolate chips and the pecan nuts slivers to the batter and mix for approximately 10 seconds.
Roll small balls approximately 3 cm in diameter. Place the balls on the baking plate. Leave enough space between the balls to avoid them clinging together when rising.
Bake in the oven for approximately 10 to 15 minutes or until the cookies are golden brown in colour.
These cookies can be served hot or cold. Store in a tightly sealed container for up to one month. However, you will be lucky if they see out the week.
