A very special coleslaw for Christmas dinner.
You will need:
1 red cabbage, cut into thin strips
200g goat’s milk cheese, diced
2 Granny Smith apples, diced
200g coarsely chopped pecan nuts
100g dried red bush berries
½ chopped red onion
½ cup thinly sliced carrot pieces
50g chopped rocket leaves
2 tablespoons sesame seeds
50ml almond oil or olive oil
1 tablespoon coarse full-grain mustard
2 tablespoons condensed milk
Combine the red cabbage, goat’s milk cheese, apples, red onion and carrot in a glass bowl and stir well.
Add the sesame seeds, rocket, raisins, red bush berries and pecan nuts to the mixture.
Mix the olive oil, mayonnaise, mustard and condensed milk in a separate mixing bowl and stir well. Add the sauce to the coleslaw and mix carefully until well blended.
