You will need:
1 cup cake flour
1 teaspoon paprika
1 teaspoon chilli powder
Salt and pepper to taste
1 cup coconut
1 cup breadcrumbs
1 teaspoon finely chopped parsley
Sunflower oil for frying
Peel the shrimps and remove the black vein; leave the end of the shrimp’s tail.
Mix the paprika, chilli powder, parsley, salt and pepper with the three eggs.
Beat the egg mixture well.
Mix the coconut and breadcrumbs in a separate mixing bowl.
Add the cake flour to a third bowl.
Dip each shrimp in the cake flour and then in the egg mixture, followed by the coconut and breadcrumbs mixture.
Dip each shrimp in the egg and in the coconut and breadcrumbs mixture a second time.
Fry each shrimp in the oil for approximately two minutes or until the shrimp is golden brown in colour.
