These meatballs are unique! A hit with the kids.
You will need:
500g lean mincemeat
1 cup grated vegetable marrows
½ finely chopped red onion
½ cup breadcrumbs
Salt and pepper to taste
½ cup tomato sauce
1 teaspoon finely chopped thyme
½ teaspoon finely chopped rosemary
1 teaspoon parsley
½ cup sour cream
Preheat the oven to 200ºC.
Spray a muffin pan with Spray and Cook.
Mix all the ingredients. Divide the mixture into 12 pieces. Roll 12 balls of equal size and place each ball in a hollow of the muffin pan.
Bake for approximately 20 minutes or until the meatballs are done and golden brown in colour.
Place a teaspoonful of the sour cream on each meatball.
Enjoy hot or cold.
