Take your pasta salad along in your car or to work.
You will need:
2 tablespoons chopped olives
2 tablespoons feta cheese, crumbled
2 tablespoons crisp onion pieces
200g penne pasta
300g white mushrooms, chopped
3 green onions, chopped
2 cloves of garlic, chopped and finely ground
300 ml sour cream
¼ cup chopped thyme, sage and parsley
2 tablespoons olive oil
Cook the pasta for approximately ten minutes. Drain and set aside.
Heat a bit of olive oil on low heat and add the mushrooms.
Fry the mushrooms until soft and done.
Add the green onions and garlic. Flavour with salt and pepper.
Lower the heat and add the sour cream. Stir through well. Set aside.
Mix the thyme, sage and parsley in a bowl with the olive oil. Blend well until a pesto starts to form.
Pour the pesto into a bottle or container suitable for salad.
Add the pasta. Pour the mushroom-sour cream sauce on top of the pasta. Sprinkle the olives and feta cheese over the sauce. Place the crisp onion on top.
Shake the bottle well just before serving.
