This is a fun way of making a pizza with low-fat dough. Children also enjoy having it in their lunch boxes.
You will need:
1 packet wraps
¼ cup olive oil
1 cup grated mozzarella cheese
1 chicken breast
4 red onion rings, finely chopped
One half of an avocado pear
6 sliced cherry tomatoes
1 teaspoon oregano
Salt and pepper to taste
1 teaspoon olive sauce (optional)
1 teaspoon barbeque spice
¼ lemon wedge
Preheat the oven to 200ºC.
Cut out a square of tinfoil, approximately 15 x 20 cm. Place the chicken breast on top.
Sprinkle with the barbeque spice and squeeze out the lemon wedge over the chicken breast.
Wrap the tinfoil around the chicken breast to make an envelope.
Fry the chicken breast in the oven for 15 to 20 minutes or until the steam has cooked the chicken thoroughly.
This is to ensure that the chicken breast is as tender as possible.
Drain the liquid from the chicken breast envelope.
Flake the chicken breast and sprinkle with additional barbeque spice.
Place one of the wraps in an oven dish. Spread a layer of olive oil on top.
Place the chicken breast, onion rings, tomatoes, olive salt, oregano, mozzarella cheese, salt and pepper on the wrap.
Place in the oven until the cheese has melted and turned golden brown. Place the avocado pear on top of the melted cheese.
Cut in wedges and enjoy. This pizza also freezes very well. Just add fresh avocado pear before serving.
