Delicious summer salad in the colours of Christmas.
You will need:
4 cups young spinach leaves
2 cups rocket leaves
2 cups coarsely chopped walnuts
2 cups coarsely chopped macadamia nuts
1½ cups pomegranate seeds
½ cup dried figs
200g sliced Danish feta cheese (feta cheese containing palm oil)
100g sliced goat’s milk cheese
½ cup olive oil
½ cup balsamic vinegar
1 tablespoon fig jam
1 teaspoon cinnamon
Salt and pepper to taste
Prepare the salad just before serving.
Soak the dried figs in boiling water overnight.
Mix the spinach leaves, rocket leaves, walnuts, macadamia nuts, pomegranate seeds and chopped dried figs. Mix well.
Add the Danish feta cheese and goat’s milk cheese.
Place the salad in a large serving dish.
Mix the olive oil, balsamic vinegar, fig jam, cinnamon, salt and pepper in a vinaigrette. Pour a generous layer of the salad sauce over the salad just before serving.
