Perfect for a braai.
You will need:
4 chicken breasts
20 small “rosa” tomatoes
120g mozzarella cheese
1 cup basil
1 tablespoon sage
1 tablespoon thyme
½ cup olive oil
4 yellow mealies
1 tablespoon paprika
1 tablespoon chicken spice
Salt and pepper to taste
4 kebab skewers
Dice the chicken breasts.
Cut the mealies in rings and dice the “Buffalo mozzarella”.
Press one chicken piece through the kebab skewer, followed by a tomato. Then add the mealie ring and the piece of mozzarella.
Repeat this process once or twice until the kebab skewer is full.
Repeat the process three times until all four kebab skewers are complete.
Sprinkle the paprika, chicken spice, salt and pepper and spices over the kebabs. Make sure they are completely covered.
Place the basil, thyme and sage in a food processor together with the olive oil, salt and pepper.
Process the spices until they turn into a smooth pesto sauce.
Spread the pesto sauce over the chicken pieces.
Braai the kebabs over the fire for 18 minutes on each side. Spread the remaining pesto sauce over the kebabs.
Squeeze the lime juice over the kebabs and enjoy.
Delicious with a glass of dry white wine.
