Fill your home with the divine aroma of freshly baked bread.
You will need:
1½ cups boiled and mashed sweet potatoes
3 tablespoons water
½ cup oil
¼ cup sour cream
1 teaspoon vanilla essence
1¾ cups cake flour
1¼ cups sugar
¼ cup brown sugar
2 teaspoons bicarbonate of soda
1 teaspoon cinnamon
½ cup chopped pecan nuts
1 teaspoon nutmeg
Pinch of salt
1 teaspoon cumin
1 teaspoon finely grated ginger
Preheat the oven to 180ºC. Grease a bread pan with Spray and Cook.
Mix the sweet potatoes, eggs, oil, sour cream and vanilla essence.
Sift the dry ingredients together.
Mix the dry ingredients with the sweet potato mixture and add the pecan nut pieces.
Stir the batter well.
Pour the batter into the bread pan.
Bake for approximately 45 minutes to one hour. After one hour, if your testing skewer still comes out covered with batter, put in back in the oven for another 10 minutes.
Set aside to cool completely before slicing.
