Delicious on a snack tray or at an athletics meeting.
You will need:
1 head of broccoli
1 head of cauliflower
5 medium size carrots
1 tablespoon finely chopped spring onions
½ cup almonds
2 beaten eggs
1 cup bread crumbs
1 cup olive oil
Salt and pepper to taste
Wash the broccoli and cauliflower in vinegar water to kill and rinse off any insects.
Break the broccoli and cauliflower into large pieces and place in a food processor.
Chop the carrots roughly and add to the broccoli and cauliflower pieces.
Add half of the bread crumbs and the almonds. Add salt and pepper to taste.
Process the mixture until fine. Add the two beaten eggs and continue the processing.
Roll tablespoons of the processed mixture into small balls. Roll each ball in the remaining bread crumbs.
Heat the olive oil and fry the balls until golden brown.
Serve hot or cold. Delicious with a dip sauce.
